Skinny Eggnog Latte is a creamy, festive and spicy way to start the holidays! This version is a skinny version meaning I’ve discarded the yolk which contains most of the fat and all the cholesterol from the egg.
The technique
The other day, I’ve tried the eggnog with all the same ingredients but simply whipped it all together. It was great and creamy but a bit sad looking so I’ve decided to separate completely the egg white to make a sweet foam with it. I’ve added simply a bit of powdered sugar to it and whisk it to a soft peak (meaning a foam texture). The sugar gives the taste and helps to keep the egg white foamy long. Then I’ve made the usual cappuccino with a espresso shot and warm milk, add a touch of cinnamon and nutmeg to the coffee and the grand marnier. I finish it up by topping the coffee with the egg white foam and a tad of freshly grinded nutmeg. So terribly simple, plus it contains way less fat and cholesterol than a normal eggnog mix.
Caution
This recipe contains raw eggs and it’s important to choose an organic and fresh egg. So please choose wisely your eggs for this recipe to avoid getting sick. Although, there are no ways to know for sure where salmonella is hidden…

Skinny eggnog latte
Makes 1 portion | Preparation: 10 minutes
Ingredients
- 1 espresso shot
- warm milk to taste
- 1 egg white
- 1 tsp of powdered sugar
- nutmeg and cinnamon to taste
- 15 ml (1/2 ounce) Grand marnier or brandy *optional
Directions
- Whisk the cold egg white in a bowl, add the sugar and bit of nutmeg half way, until soft peak (foamy)
- Add the espresso shot, milk, cinnamon and grand marnier to a coffee cup and mix
- Add the egg white foam on top with a sprinkle of nutmeg
