Curry Cauliflower Couscous is a great side dish, although I must clarify: there is no actual couscous. This recipe is simply blended cauliflower and does wonders for low-carb diet seekers. This white veggie side dish perfectly replaces couscous, bulgur, and rice without being packed with carbohydrates.
Cauliflower vs. Rice
I mean, rice is a beloved ingredient; I have nothing against it! However, sometimes, to lower our calories, we need to make some concessions, this cauliflower couscous being a good one! You can make whatever BBQ meat or fish and use this as a side dish to make it ‘lighter.’ The texture is similar, and cauliflower is so mild tasting that any aromatics thrown at it would change its flavour.
I added a simple curry and garam masala powder to the couscous to give it an Indian flare, inspired by the main dish of the day: grilled tandoori skewers. However, you could tweak it with whatever herbs or aromatics you want—butter and thyme, olive oil and rosemary, garlic and lemon, etc. Cauliflower is an excellent alternative to those filled with carbohydrates dishes like bread, rice, couscous and much more.
Other Healthy Side Dishes
Indian flavoured Cauliflower Couscous
- 1 cauliflower
- 1 tbsp curry powder
- 1 tsp garam masala
- 2 scallions
- 3 tbsp ghee (or butter)
- salt and pepper
- Cut the cauliflower into big florets.
- Add to a food processor and blend until it becomes a couscous texture.
- In a big pan, bring to medium-high heat. Add the butter and cauliflower couscous to the pan with the spices, salt, and pepper.
- Mix, and cook for 3 minutes until slightly coloured.
- Top it with some scallions and serve.
