This simple spring Strawberry and Feta Salad has a bit of everything in it and is so easy to put together. It’s a fresh medley of fruit, cucumber, and feta cheese drizzled in a honey vinaigrette.
Salty, briny feta and sweet-tart strawberries are the perfect combo, so why not turn them into a fresh, vibrant salad? A drizzle of honey enhances the feta’s richness—just like in that dreamy, crispy phyllo-wrapped feta with honey. Crunchy pistachios and scallions add texture and a savoury kick, while fresh dill brings freshness. This Strawberry and Feta Salad is simple yet packed with bold flavours, contrasting textures, and eye-catching colours!

Honey Dressing
To highlight the salad, use a simple three-ingredient dressing made of honey, white balsamic or apple cider vinegar, and olive oil. Most people always use mustard as a salad dressing emulsifier, but did you know honey does the same? Plus, since you can dose the amount of honey, you can make it this perfect sweet and sour vinaigrette or, more generously, make it sweeter.

A Sunny Salad

This salad is best from spring to summer, right when strawberries are at their peak. Light yet satisfying, it is refreshing for warm days, and the combination of fresh herbs, crunchy nuts, and crisp greens makes it a well-rounded dish for picnics, barbecues, or easy alfresco meals. It could also be served as a side dish for grilled meats, a light lunch, or even with added protein like chicken or quinoa.
Variations
Strawberry and Feta Salad can easily be modified:
- The lettuce base can be anything from arugula, baby spinach, lamb’s lettuce to a mixed salad.
- The Feta cheese could also be swapped for fresh goat cheese.
- The dressing could use maple syrup instead of honey in the exact quantities.
- The fresh herbs: the dill could be replaced with fresh basil, chives or simple parsley.
- You can use whatever nuts you like instead of the pistachios, such as cashews, almonds, walnuts, etc., although I would suggest some salted ones.
- Use apple cider vinegar instead of white balsamic or even champagne vinegar!

Whether you’re hosting a summer picnic, looking for a quick side for grilled dishes, or want a refreshing meal, this salad is the ultimate go-to. Plus, it’s incredibly easy to make—no cooking required!
