This fun and easy Watermelon & Yogurt Popsicles are crunchy and salty on the first bite and juicy and sweet on the second! Perfect snack for the side of the pool or a great way to finish up a BBQ feast! Plus, there is no melting like ordinary popsicles, so that the little ones won’t mess up the floor.

The Watermelon Effect

Watermelons are enormous… generally, you would want to use them before leaving them for days in the fridge and monopolizing all that precious space. Making a punch with it is a standard solution, or maybe next time, try these popsicles. The famous pink fruit contains about 90% water, making it a perfect candidate for the freezer. I’ve left the watermelon rind for aesthetic reasons, but you could cut it off before freezing the pops. Another suggestion would be to pick up a seedless watermelon for… well… I believe no explanation is necessary here.

Let’s Talk Honey, Honey!

Watermelon Pistachio pops

A whole world of different flowers and nectars results in different kinds of honey. Some are more popular than others, like the multi-flower mix of thyme, rosemary or lavender. Although one of my favourites is the Flor de Azahar, or orange blossom, which is beautifully perfumed, and you can feel the orange in there. I’ve used this one for this recommended recipe, but it’s up to you! I’ve added the drizzle of honey once the pops are frozen, just before serving. It will freeze on the popsicles without making a mess, giving this extra fun texture!

Variations

Watermelon & Yogurt Popsicles

You could use low-fat or vanilla-flavoured yogurt, depending on your needs! Also, the choice of nuts could be switched to lovely soft almonds. The main idea here is to use the watermelon as the popsicle; no need to use a food processor or popsicle mould! You can freeze the watermelon and put a popsicle stick and nothing else! It’s a great way to use watermelon leftovers!

Equipment

Ingredients

  • 6 pieces watermelon
  • 150 g natural or vanilla greek yogurt
  • 100 g pistachios (crushed)
  • 3 tbsp honey (orange blossom type recommended)

Instructions 

  • Cut the watermelon into small triangles.

  • Cut an opening with a sharp end knife at the end of each piece and insert a popsicle stick.
  • Cover with the help of a spoon, the tip with yogurt, and add the crushed pistachio.
  • Add to a deep plate covered with wax paper, cover with plastic wrap and freeze for at least 1 hour.
  • When ready to consume, drizzle some honey on the popsicles.
