Chicken fingers is the kid’s favorite dish, and let’s say… I am an eternal kid… No shame here… Those chicken bits are the perfect comfort food, or home feeling food… Especially with this brown sauce, fries and vinegar coleslaw (recipe), it brings me right back to my childhood, more precisely, the beloved French Canadian “Rotisserie Restaurant” called “St-Hubert”. Every French Canadian would tell you… this place taste like home… it’s nothing fancy just nice and simple roasted chicken a 1000 different ways. My favorite dish was the chicken fingers obviously… as a kid… until today… I mean, it’s an emotional meal this one, and yes everytime I go back to Canada, I have to make a stop at St-Hubert to get myself those chicken fingers. The famous brown sauce is the secret of that restaurant, it is served with every single dishes of theirs. My version which is delicious, although I…

This sandwich is an imitation of the North American lunch dish; Club Sandwich. Just a few things changed, for example, the bread turned into a baguette, the bacon got replaced by a slightly cooked Serrano (Prosciutto)  cured ham and the mayonnaise switched for an aïoli sauce. I did a side of healthy oven baked thyme potato slices and a few pickles… No better lunch than a club sandwich, and the size of this version is to your taste, just have to cut the size of sandwich you’d like. I often think a traditional 3 layers Club Sandwich is way too big… With this one you choose, it’s a different format but the taste is all there! This version is healthier, since you cut the middle layer of bread, cut on the bacon and mayonnaise. For 100g of bacon, there is about 42g of fat in it, while the serrano ham 9g only.…

Baked hot chicken wings in a homemade habanero-strawberry sauce and a side of blue cheese dip with veggies. Who’s starving for some hot chicken wings? Those chicken wings are medium-hot wings with a fruity touch, the strawberry and honey glazed helps to calm down all that habanero heat. Plus, on the side another tongue soothing element is the creamy blue cheese dip. Those chicken wings are baked making them healthier. Great on any occasion, whether it’s the “game” of the century or simply a gathering with friends. Don’t forget to bring along the extra habanero sauce for the folks that likes the heat! Let’s talk habanero The homemade habanero sauce is a indispensable new comer for the fridge, this version contains a few strawberries, to make it extra fruity and bring out the fruity side of the habanero also. I saw many recipes with mango or papaya, but since it the middle of winter, well…

This chicken couscous recipe is a no brainer… It’s so simple and healthy, a everyday kind of meal. I went to Morocco a while back, and every single restaurant offered whether a chicken couscous dish or the famous chicken tajine dish. Don’t get me wrong here, it was delicious, but after 3 weeks of eating one or the other every diner… I thought I was done for life with couscous… if you know what I mean. But time pass, and you forget about that excess of couscous that happened a while back, and surrender all over again. Just not everyday though… Couscous is a western African meal, the origin isn’t known exactly but it goes back to around 200 b.c., created by the Berbers.  I’ve met that nice Moroccan guy and he told me that the couscous we eat in our “westerners” life isn’t the same as the real…

Feeling like a fresh, light, summer meal? Get those rice noodles out and let’s make a simple wok dish. The coconut chicken recipe is really similar to a yellow curry sauce, but this one is for lazy people, you can use weather the yellow curry paste but I simply used the curry powder. That powder is actually a British invention to reproduce the orient flavours. The powder usually contains curcuma, ginger, turmeric, coriander, fenugreek, pepper, cardamom etc. It a mix of at those asian flavours in one pot, some powders are spicier than others, the ingredients tends to change depending of the company. I use this curry powder on popcorn, with butter, it’s delicious! Coconut meat constipate while the coconut water is a natural laxative, how perfect is that? A perfect balance within a single coconut. In the recipe, coconut milk is used, but it could be switched to coconut cream, to make it fatter, tastier and smoother.…

This recipe is a bite into the tropics, brings you right to those caribbean islands, also is a great recipe for those people on eternal diet, like myself. You can spice it up to your liking and with whichever is your favorite hot pepper… mine are the habanero peppers. My husband happen to grow them and I obviously have too many, so I dehydrate them and make powder out of them. I’m not usually a big hot pepper lover but this one is special… the habanero has that fruity taste to it. I encountered with this hot pepper in Martinique, a caribbean island. Since then… I add it to many of my spicier recipes, like the spicy “ratatouille” spaghetti sauce with a bit of habanero pepper, it’s fantastic or I do “spicy cod fritters” which is a “typical” meal from the Antilles. They eat those balls like candies over there,…
