Curry chicken sandwich

This sandwich is an upgrade from my favorite childhood sandwich. The traditional version is made with lots of mayonnaise, this version has barely any. The secret is: a good pickle juice, curry powder and a bit of mayo. Everyone have those leftovers of chicken once in awhile, well this is how you want to use those leftovers for!

Curry chicken sandwichBack in my high school time, I had a friend which would always get lunch from home, and I had a card for cafeteria food. Each time she would get her mom’s famous chicken sandwich I would bargain with her to exchange it with one of my meals + an extra dessert and drink… I was such a fan of her mom’s sandwich, it became a automatism, each time she would get it… she would right away exchange it with me at lunch time. That was pretty much every month or so. I loved it so much! So with the years… and a little excess of weight… I’ve created a healthier version of it.

Here it is!

Spanish Club Sandwich

This sandwich is an imitation of the North American lunch dish; Club Sandwich. Just a few things changed, for example, the bread turned into a baguette, the bacon got replaced by a slightly cooked Serrano (Prosciutto)  cured ham and the mayonnaise switched for an aïoli sauce. I did a side of healthy oven baked thyme potato slices and a few pickles… No better lunch than a club sandwich, and the size of this version is to your taste, just have to cut the size of sandwich you’d like. I often think a traditional 3 layers Club Sandwich is way too big… With this one you choose, it’s a different format but the taste is all there!

Spanish Club SandwichThis version is healthier, since you cut the middle layer of bread, cut on the bacon and mayonnaise. For 100g of bacon, there is about 42g of fat in it, while the serrano ham 9g only. You can easily reproduce the crunchy texture of the bacon by slightly cooking your cured ham (Serrano, Prosciutto), a 5 minute, just so it loses its water and become extra tasty and crisp. Cooked cured ham is a good alternative to bacon, you’ll see, and it’s healthier.

As for the side potato slices… they are my favorite way of eating potatoes. It’s, simply, small potatoes with skin cut into quarters, add just 1 tbsp of olive oil to it with the spices of your choice. I like to mix it up with; spicy paprika (pimentón picante), thyme, garlic, salt and pepper. It’s a bold, tasty and practically contains no fat, way to eat healthy crispy “french fries”. Just have to cook in the oven for about 45 minute at 200°C (400F) and voilà!

The aïoli instead of mayonnaise is a Catalan touch, it is basically a garlic mayonnaise. It is not as strong garlic taste as you’d think, it’s really mild, so don’t believe you’ll bite into pure garlic here… In Catalonia, they manage to make aïoli without any eggs, just need a fresh garlic clove, some olive oil and a mortar. It’s a technique that not many can achieve, I’ve heard for example that if you want the emulsion to work, you’ll need an extremely fresh garlic glove, otherwise it will never emulsify. So here, I’ll make mine the mayonnaise way with some eggs, maybe one day, I’ll figure out the secret of that pure aïoli without eggs, but for now; let’s make it the easy way. You’ll be able to keep your aïoli in the fridge up to about 5 days. (Check the recipe here)

So let’s get lunch ready!

Morning glory

Feeling like having a good bite into your morning?

This is your answer, a simple and fresh morning glory sandwich. They say the most important meal of your day is breakfast… well let’s make it a delicious one. This isn’t exactly a recipe, but rather a simple idea for a different kind of morning bite, or even lunch bite.

Any good breakfast should include an egg, a creamy, perfectly cooked egg is what everyone deserves ahead of a big day. So let’s talk eggs… they are a great source of protein and increase your HDL (good cholesterol) to keep you heart healthy. On top of it all, there are millions of ways to cook them.

In Europe, eggs are stamped with a code, when it’s starts with “0” it means it’s an organic egg, “1” is free-range egg, “2” indoor housing and “3” is for in-cage. I know not everyone has the means, but we should always be grateful for the nice eggs those chicken give us. We owe it to them to buy a “1” at least.

Morning glory sandwich

2 portions, 1 ogre

  • 3 eggs
  • 1 tbs zucchinis, mini cubes
  • 1 tbs onion
  • tomato slices
  • lettuce of your choice
  • slice of ham
  • mayonnaise
  1. Soften the onion + zucchini cubes in a pan with olive oil
  2. Mix the eggs
  3. Add salt, pepper
  4. Bring the pan to high heat
  5. Add the eggs and shake the pan gently and use a spatula until it looks like “rice pudding”. Let set for one minute
  6. Turn the omelette
  7. Add all the ingredients to a nice, healthy and slightly toasted bread, bagel or English muffin.

Enjoy the rest of the day!
